Day Two

Smooth sailing today.

Mike made a blueberry, blackberry, banana and almond milk smoothie for breakfast! Yummy! Greek salad for lunch minus the feta cheese – I added avocado instead to give it that creamy feeling.
I snacked on kale and sweet potato chips. I’m not trying to starve myself but I haven’t been hungry. I heard that when one is on a veggie, fruit diet one can eat as much as they want.
For dinner I’m having sweet potato veggie chili! Yummy.

Here’s how I make it:
1 onion chopped
3 garlic cloves chopped
2 sweet potatoes peeled and cut into chunks
1 red bell pepper chopped
1 green pepper chopped
1 15 oz can kernel corn drained
1 15 oz can black beans drained
1 15 oz can kidney beans drained
1 8 oz can Rotel
1 28 oz tomatoes in sauce or whole tomatoes that you can chop in a blender
Chili powder
Cumin
1 ancho chili chopped

Put them all together in a large pot or crock pot, add more tomato juice, if the liquid doesn’t cover all the solids. I really don’t like to measure spices so use your own judgement. If the chili turns out too spicy add 2 tablespoons of peanut butter. I know it sounds weird but believe me it tastes amazing!

  2. suna delicios totul!retea cu cartofii dulci sigur o incerc si eu…nu am mancat niciodata cartofi dulci desi am auzit ca sunt foarte gustosi.Cred ca poti face si prajituri din asa ceva
    In alta ordine de idei,Andreea,iubitzica mea,admir initiativa,ta si te sustin 100%.
    Asa ar trebuii sa facem toti macar o luna pe an. Sper si cred ca «aventura»ta de 90 de zile se va transforma intr-o lectie pozitiva pentru multi dintre noi.Abia astept postarile tale,pune si fotografii ca sa fie si mai imbietor.
